Howdy, hi, hello — I’m Amber. I’m in my mid-30s, three years sober, and living a life I love here in Portland with my rescue pup (and fellow Libra), Dolly Parton. When I’m not cooking, you’ll probably find on my way to the river, a classic movie playing at Acadamy, a concert, a food pop-up, or wandering a farmers market & introducing myself to every dog in sight. I’m a memoir and reality TV fanatic, pizza connoisseur, new-to-strength-training gym rat, coffee snob, and a human who’s constantly working through old childhood patterns and relearning how to love myself.
After a decade of managing restaurants — and a lifetime of unhealthy eating habits — I walked away from both. Five years ago, my doctor told me my cholesterol levels were so high I was essentially preparing for a heart attack. That was the wake-up call. I began listening to my body in a new way and discovered how powerful clean, whole ingredients could be.
What started as a personal shift has grown into a passion: helping others find that same sense of nourishment. Whether vegan, vegetarian, or carnivore — we all benefit from more plants on our plates.

My Philosophy
Nourishment isn’t a 30-day reset or a quick detox. It’s a daily practice. It’s about building meals (and moments) that strengthen your body and soften your life.
For me, the food is only half the story. Ambrosia has grown into a community fueled by compassion, kindness, and connection. Many of my clients and I have never even met face-to-face, yet there’s a real sense of trust between us — a reminder that feeding one another is one of the oldest, most human ways of caring.
And here’s something else I’m proud of: against the advice of mentors (and even a few clients), I’ve never raised my prices. I didn’t start this business to get wealthy — I started it to help my community become wealthy in vegetable-focused meals.
